Almonds A Good Source Of Protein…

Almonds are truly a powerful package of nutrients. They are and excellent good source of protein (6 grams per one ounce) along with dietary fiber, phosphorus, calcium, potassium, magnesium, manganese, copper, zinc, iron and vitamin E. In fact, one ounce of almonds provides about 7.4 grams of alpha-tocopherol vitamin E, 50 percent of the RDA. Almonds are the only good source of protein that is also an excellent source of vitamin E.

As a protein, almonds are rich in arginine and low in lysine. Research indicates that diets rich in arginine, low in lysine. This combination has been shown to reduce the risk of coronary disease.

Research suggests that an overall mixed raw vegan diet provides the complementary spectrum of amino acids that are needed to supply our bodies with high levels of nutrient dense protein. Almonds play a part in a truley healthy diet and contribute to the overall protein quality of a raw vegan diet as they provide  a complete and high quality protein.

Almonds and Dietary Fiber

Emerging research demonstrates that the combination of dietary fiber with protein contributes to overall satiety and therefore may play a role in controlling caloric intake. Most protein sources do not provide dietary fiber such as is found in almonds. Peanut butter, cheese and eggs, for example, are good sources of protein but do not supply the level of dietary fiber that almonds do.

Almonds and Monounsaturated Fat

Almonds  have a large quantity of monounsaturated fat  which has been associated with a reduction in total  LDL cholesterol . Scientific research shows that just one ounce a day can have this potential effect.

Almonds and Minerals

Almonds are also unique in that they provide various minerals that are essential for bone health. Calcium, magnesium, manganese, and phosphorus have been implicated in maintaining bone mineral density. Almonds are comparable to skim milk and cheddar cheese in the quantity of these bone-building minerals provided in one serving. Other protein sources like chicken, beef, peanut butter, and eggs don’t offer near the quality of minerals that almonds do.

Almond Milk Recipe:

  • Vitamin E – Almonds are an excellent source of vitamin E, an antioxidant that has been shown to decrease the risk for certain forms of cancer, heart disease and cataracts. Vitamin E is also needed for healthy blood cells and tissues.
  • Folic Acid– Almonds, like other fruits and vegetables, make an important contribution to a diet adequate in folic acid, or folate. This important B-vitamin can reduce the risk for neural tube defects (birth defects) and is necessary for making red blood cells. It may also protect against heart disease and stroke.
  • Protein – almonds contain protein which is necessary for healthy muscles, blood and organs, and it can also be used for energy.
  • Fiber– almonds are a good source of dietary fiber – the part of the plant foods that is not digested in the human body. Fiber appears to play a protective role against heart disease and diabetes, an d aids in the prevention of constipation, diverticulosis, and some forms of cancer, such as colon and rectal.
  • Iron – An ounce of almonds contains 6% of the recommended daily requirements of iron. This essential mineral helps carry oxygen to all of the body’s cells and organs.
  • Zinc – An ounce of almonds contains 6% of the recommended daily requirements of zinc, which aids in wound healing and is involved in protein metabolism. Zinc is also important in the development of the reproductive system.
  • Copper – Almonds are a good source of copper. This mineral helps carry oxygen throughout the body and helps keep bones, blood vessels and nerves healthy. It may also protect against heart disease.
  • Magnesium – Almonds are an excellent source of magnesium, a mineral used in building bones, making protein, releasing energy from muscles and regulating body temperature. It’s also needed for calcium and potassium balance in the body.
  • Phosphorous – Almonds are a good source of phosphorous – the second most abundant mineral in the body. This important mineral is needed for strong bones and teeth, and helps the body use protein, fat and carbohydrates.
  • Pytochemicals– Almonds, like all other plant foods contain phytochemicals. These plant chemicals may have protective effects against heart disease, cancer and other chronic diseases.

When you awake in the morning, before you brush your teeth, drink anything or eat any food, bring your tongue to the roof of your mouth and make a chewing motion until you have enough saliva in your mouth, then spit the saliva into a clear 8 oz  glass of water. Within 5-15 minutes, look in the glass. Why does this work? 

Candida overgrowth begins in the colon. Overtime, as the fungal yeast multiplies it begins to migrate through the digestive tract, moving up into the small intestine, then the stomach (bloating, indigestion), up the esophagus and into the mouth. If it becomes strongly entrenched there and many times you can see a white film on your tongue and inside your cheeks. The term dysbiosis was originally introduced in the early 1900s by Dr Eli Metchnikoff to describe an imbalance of the bacteria in the gut. Literally it means ‘dys’ incorrect and ‘biosis’ life. The word comes from ‘symbiosis’ meaning to reside together harmoniously with the ‘dys’ meaning the opposite. He coined the expression that “Death begins in the gut!”. Metchnikoff was awarded the Nobel Prize in 1908 for his work on friendly bacterial flora [1]. He introduced the idea that fermented milk products could prove beneficial to the gut, inhibiting bacterial infection. He believed that the root of many diseases was via intestinal bacteria decomposing protein in the bowel. Evidence has suggested that Dysbiosis plays a part in many conditions such as: Over production of yeast, Irritable Bowel Syndrome, Anklyosing Spondylitus, Rheumatoid Arthritis, Inflammatory Bowel Disease, Multiple Sclerosis, Chronic Fatigue, Eczema, food allergies. Food Combining – A Letter To A Friend

Dear Cha Cha,

I really hate to think that I have to worry about every morsel I put in my mouth, but there are some basic rules and I always try to adhere to, as best possible. I am not of the school that improperly combined raw food creates alcohol in the colon. I say eat raw, go to the bathroom 3 times a day and do enemas often, lol.

Good Combinations:

  1. Acid Fruits AND Sub-Acid Fruits.
  2. Sub-Acid Fruits AND Sweet Fruits.
  3. Starches AND Vegetables & Greens.
  4. Vegetables & Greens AND Proteins.

Bad Combinations:

  1. Try to not eat carbohydrate foods and acid foods at the same meal.
  2. Try to not eat a concentrated protein and a concentrated carbohydrate at the same meal.
  3. Never consume two concentrated proteins at the same meal.
  4. Do not consume fats with proteins.
  5. Do not eat acid fruits with proteins.
  6. Do not consume starches and sugars together.
  7. Eat but one concentrated starch at a meal.
  8. Do not consume melons with any other foods.
  9. Drink ALL juices alone.
  10. Fresh fruit should be eaten alone or on an empty stomach. It’s best to only combine fruits from their own category.
  11. Try to not have fats with fats. (Example – nuts with avocados)

( I DO NOT AGREE WITH ALL OF THESE) 

Some categories can be combined and still digest well while others you may want to avoid. I lean more to Matt Monarch’s  belief  that when we eat raw food dishes in moderation we do not have to deal with paying such close attention to strict food combining and examining every morsel we put in our mouths. I know I should not combine bananas with acid fruits like pineapple or oranges, but I just can’t resist, lol.

I find its usually the people who are not 100% raw who are caught up with food combining. Stay logical and stay 100% raw and let those who wish to focus on food combing do so. I will put our program, which is healing and delicious against anyone else’s in the world!

Keep in mind I am not saying throw out food combining, what I really am saying is I would rather have a little gas and be able to love what I am eating, lol.

Ingredients

  • 3 cups raw dehydrated coconut – shredded
  • 1 cup cacao powder
  • 1/2 cup fresh coconut water
  • 1/2 cup agave nectar or date pate/water or yacon syrup.
  • 1/2 cup coconut butter
  • 1/4 cup Maca
  • 2 tbs raw vanilla – beans ground 
  • 1/4 tsp celtic sea salt

Directions – Combine all ingredients into a bowl, and mix thoroughly with your hands or a big wooden spoon. Roll into 1 inch balls, place on dehydrator sheet, dehydrate for 6-12 hours.

Raw Chocolate News… Cornell University Scientists Discovered Raw Cacao/Chocolate Powder Has Nearly Twice The Antioxidants Of Red Wine, And Up To Three Times The Antioxidants In Green Tea

Researchers, led by Chang Y. Lee, chairman of the Department of Food Science and Technology at Cornell  state “the reason that raw cacao/cocoa leads the other drinks is its high content of antioxidant compounds called phenolic phytochemicals, or flavonoids”.

Scientists have known for years that raw chocolate/cacao contains massive amounts of antioxidants, in fact there is no common food with a higher antioxidant rating. In fact recent research shows that the antioxidants found in raw cacao have unmatched stability and are easy to assimilate. Of all known foods, raw cacao is also the ONLY food which does NOT lose its Oxygen Radical Absorption Capacity (ORAC) over significant periods of time, making raw cacao/chocolate both the most POTENT and  STABLE source of antioxidants found in any natural food.

According to research cited in The New York Times,” fresh raw cocoa beans are super-rich in the type of flavonoid called flavanols which are very strong antioxidants. Cocoa/cacao beans contain 10,000 milligrams (10 grams) of flavanol antioxidants per 100 grams – or an amazing 10% antioxidant concentration level”!

How To Peserve Food & Enzymes From Your Summer Garden…

Its nearing the end of summer in the northern hemisphere and it time to store our fruits, vegetables and berries which we have collected from our summer gardens. What we are going to share with you will not necessarily prove popular with some in the raw food community, but we believe in good science an therefore we have to speak out, as the health of 0ur family and friends is much more important to us than raw food dogma.

We therefore  suggest freezing as much locally grown organic raw vegetables, fruits and berries as possible, unless you have access t this level of fresh living  nutrition year around.

The freezing process will cause the enzymes to become inactive thereby preserving the nutritional values. Testing shows there will be a reduction in the enzymatic action of some of the enzymes but the freezing will not denature all the enzymes, like cooking does.  Scientist estimate only 10%-30%. of the enzymes are denatured in the freezing process.produce hauling  truck We feel you will be much better off eating fresh, frozen, organically grown produce, rather than having to purchase food that has not been left to ripen on the vine . The grocery stores are also selling food which has traveled across the country, or has been flown in from halfway around the world, so the food source is sometimes unknown and with the loss of water volume much of the vitamins and phyto-nutrients have been reduced.

Cooking food was the way early man preserved it. There was no refrigeration or dehydration. Obesity Rates Keep Rising, Troubling Health Officials

Americans are continuing to get fatter and fatter, with obesity rates reaching 30 percent or more in nine states last year, as opposed to only three states in 2007, health officials reported on Tuesday.

The increases mean that 2.4 million more people became obese from 2007 to 2009, bringing the total to 72.5 million, or 26.7 percent of the population. The numbers are part of a continuing and ominous trend.

But the rates are probably underestimates because they are based on a phone survey in which 400,000 participants were asked their weight and height instead of having it measured by someone else, and people have a notorious tendency to describe themselves as taller and lighter than they really are.

“Over the past several decades, obesity has increased faster than anyone could have imagined it would,” said Dr. Thomas Frieden, the director of the Centers for Disease Control and Prevention, which issued a report on the prevalence of obesity. Obesity rates have doubled in adults and tripled in children in recent decades, Dr. Frieden said.

If the numbers keep going up, he added, “more people will get sick and die from the complications of obesity, such as heart disease, stroke, diabetes and cancer.”

The report estimates the medical costs of obesity to be as high as $147 billion a year, and notes that “past efforts and investments to prevent and control obesity have not been adequate.”

Researchers blame the usual suspects: too little exercise and too much of the wrong kind of food, which means not enough fruits and vegetables and too many high-calorie meals full of sugar and fat, like French fries, soda and other sweet drinks. Children do not get enough exercise during the school day; Dr. Frieden noted that even in gym classes, students are active for only about a third of the time.

A 5-foot-4-inch woman is obese if she weighs 174 pounds, as is a 5-foot-10-inch man who weights 209 or more, according to the disease centers. Both would have a body-mass index, or BMI, of 30; that index is calculated from height and weight, and scores of 30 or over are defined as obese.

The nine states with obesity rates of 30 percent or more are Alabama, Arkansas, Kentucky, Louisiana, Mississippi, Missouri, Oklahoma, Tennessee and West Virginia. The highest rate, 34.4 percent, was in Mississippi.

People over 50 had higher rates of obesity than those who were younger. The aging of the population may account for some of the general increase in obesity, but not all of it, said Dr. Heidi Blanck, chief of the disease centers’ obesity branch of the division of nutrition, physical activity and obesity.

Non-Hispanic black women had the highest obesity rate, 41.9 percent. Over all, blacks and Hispanics were more likely than whites to be obese, and the more education people had, the less likely they were to be heavy.

Only Colorado and Washington, D.C., had obesity rates under 20 percent. Researchers are not sure why. Dr. William Dietz, director of the nutrition, physical activity and obesity division, said that Colorado had spent money from a state lottery on biking and walking trails and that many people were using them. The state seems to have “a culture of physical activity,” he said.

Dr. Dietz said the relatively low prevalence of obesity in Washington was harder to explain, particularly because the area has a large black population.

He said one explanation may be that many residents ride the subway; studies have shown that compared with people who drive, those who use public transportation tend to be thinner because it involves more walking. In addition, Dr. Dietz said, there is evidence of above-average fruit and vegetable consumption, and higher rates of breast-feeding, both of which are linked to lower rates of obesity.
