The kitchen is a chemical laboratory that produces millions of completely new substances, which—if they exist at all in nature—do so only rarely. A cooking process called the Maillard reaction will produce an almost infinite number of sugar-and-protein combinations. These new substances are called advanced glycation end products (AGE) and are linked to chronic disease. They are also known as AGEs, glycotoxins, Amadori compounds, or Advanced Glycated End Products.

Throughout most of our evolutionary history, before we invented processing methods like grinding and cooking food, human beings rarely ingested as many Maillard molecules (compounds formed by the interaction between amino acids in foods and heat) as we do today. The introduction of dairy products and grains in recent years has brought about changes to the chemical substances humans eat, just as the introduction of any new foods does.

Cooking can seriously alter the energy of food. It is scientifically proven by Kirlian photography, which shows that live and bioactive raw foods are more vibrant than cooked ones

Cooking alters the biochemical structure and nutrient makeup of food. Molecules in the cooked food are deranged, degraded, and broken down—and this degeneration happens when you cook at home as well as in restaurants. When fiber is cooked it’s broken down into a soft, passive substance in the intestines, its broom-like and magnetic cleansing quality becomes lost.

When cooking food, nutrients—such as vitamins and minerals—are depleted, destroyed, or altered. How much they are depleted depends on the type of heat used (for instance boiling water destroys more nutrients than simmering)

Cooking denatures (alters the shape of) up to 50% of protein molecules. This denaturing and crosslinking causes the protein to lose its original function in the body and speeds up cellular aging.

The interrelationship of nutrients is altered from its natural synergistic makeup. For example, when meat is cooked more vitamin B6 than methionine—an essential amino acid found in foods such as fish and beans—is destroyed which fosters atherogenic free radical-initiating homocysteine accumulation (a substance that can cause heart problems). Food that has been cooked loses its water content and can no longer be considered a healthy part of the diet.

When foods are cooked at high temperatures, toxic compounds and “byproducts”—such as free radicals that cause aging and cancer—are formed. Frying or grilling produces higher levels of these contaminants than other cooking methods do. Cooking fats and proteins generate carcinogenic substances, mutagens, and free radicals.

Heat causes molecules to collide, leading to bonding and crosslinking the formation of new substances. The waste produced by cooking can fill, block up and disrupt your body’s cells, organs, and systems. This can result in premature aging, disease, and even death. The following are some of the ways that cooking damages your body:

-Loss of vitamins and minerals

-Increase in free radicals

-Damage to proteins, fats, and carbohydrates

-Loss of vitamins and minerals

Food enzymes in raw food are destroyed at temperatures as low as 118 degrees Fahrenheit. These natural digestive aids aid in digestion, becoming active immediately upon ingestion. Cooking destroys 100% of these enzymes—meaning that people who eat a lot of cooked foods may have difficulty digesting their meals properly.

Eating enzyme-dead food places a burden on your pancreas and other organs, which eventually exhausts these organs. The digestion of cooked food uses valuable metabolic enzymes in order to help digest your meal—so when you eat the raw version of that same dish, those digestive juices are free to do what they were meant for (instead of being diverted back into your stomach). Unlike raw food, which is easily digested and passes through the digestive tract in a half to a third of the time it takes for cooked food.

When a person eats cooked food, white blood cells rush to the digestive tract, leaving the rest of the body less protected. For this reason, from an immune system perspective—one in which foreign (toxic) substances are viewed as invaders of our bodies—eating cooked foods amounts to us eating something that is toxic.

Cooked meat contains putrefactive bacteria, which outnumber the healthy strains of intestinal flora. Eating cooked meat can lead to a condition called dysbiosis or intestinal toxemia—your body is flooded with toxins as these bad bugs overpower your good gut microorganisms. These toxins can create a variety of symptoms, including bloating, gas, and indigestion. Due to the high amount of fat in cooked meat, it also slows down digestion by clogging up our digestive tract.

Cooked starches and fats can cause serious intestinal problems. When they aren’t digested properly, these types of food tend to break down into a tar-like substance called mucoid plaque that builds up in the intestines. Cooked food is difficult for the body to digest, and it contains fewer usable nutrients than raw foods. Cooking destroys enzymes and heat-sensitive vitamins such as vitamins C and B vitamins. These are important because they support digestion and help us absorb iron from plant foods.

Cooked foods cause a build-up of toxins and waste material in many parts of the body, including within individual cells. One such toxin is called lipofuscin, which accumulates in nerve tissue as “age spots” or liver spots. Lipofuscin is made of oxidized fats and proteins, including cholesterol. Lipofuscin has also been found in the brain, causing age spots on the brain. This may explain why many elderly people suffer from mental deterioration. The more lipofuscin that accumulates in a person’s body, the more impaired their thinking ability becomes.

Because cooked food is less nutritious and contains toxins and wastes, individual cells in the body don’t get enough nutrients. When cells don’t have enough nutrients, they become malnourished and degenerate. This can cause the body to age prematurely and develop diseases. For example, when your skin suffers from a lack of oxygen, it becomes wrinkled. The same thing happens on a cellular level when the body is deprived of oxygenated blood for an extended period of time.

Because of the way processed foods affect metabolism, people who consume them tend to overeat. They don’t get enough nutrients from cooked food and their cells are constantly hungry—so they demand even more calories. Processed foods also have a negative impact on your body’s hormone levels. When you eat processed foods, your blood sugar levels increase rapidly and then fall just as quickly. This causes stress to your pancreas—which releases insulin in response to the drop in blood glucose levels. Insulin is a hormone that helps transport glucose into cells where it can be used for energy production or stored as fat.

When your body is undergoing a detoxification or cleansing process, it can manifest itself in various ways. Sometimes, you may feel like you’re dying of thirst. This is because as your body gets rid of toxins, it also rids itself of excess fluid that has been stored in the tissues and organs. You may also experience headaches or migraines, fatigue, nausea colds, diarrhea, and vomiting. These are all signs that your body is cleansing itself of harmful substances—and they will pass within a few days.

An overburdened immune system, having to handle the massive daily invasions of toxins and toxic by-products, eventually becomes weakened. A key factor in the aging process. Weakened immune systems often result in the onset of colds, flu, and other illnesses. This is because the body’s natural defense mechanisms are unable to cope with an attack by foreign viruses or bacteria. In extreme cases, this can lead to cancer or degenerative diseases such as arthritis.

Cancer is caused by the buildup of wastes, toxins, mutagens, and carcinogens within cells. Excess free radicals also damage DNA molecules in all cells—and some become cancerous as a result. This pollution causes an estimated 30% of American deaths each year. As we age, our bodies become more susceptible to illness. This is because the immune system becomes weaker and is not able to fight off foreign invaders as effectively as it once did. In addition, there is an increase in free radical activity that causes damage to DNA molecules and makes them susceptible to mutation.

The natural aging process can be slowed down or even reversed by a raw-food diet. A raw-food diet causes the body to produce more antioxidants that help to eliminate free radicals. It also increases the production of enzymes that detoxify chemicals in your body and neutralize carcinogens.

After eating a cooked meal, the number of white blood cells in the bloodstream increases, and there is an alteration in their relative proportions. This phenomenon is called “digestive leukocytosis”. The white blood cells are the body’s first line of defense against infection. When you eat cooked food, your body recognizes it as a foreign substance and produces more white blood cells to attack and digest it. After eating a raw-food diet, there is no change in the number of white blood cells in the bloodstream. This means that your body does not have to devote energy to digesting the food—all its energy can be used for other processes such as repairing damaged DNA molecules.

Cooked Food Studies

The effects of cooked and processed foods on the immune system were studied at the Institute of Clinical Chemistry in Lausanne, Switzerland, with Dr. Paul Kouchakoff serving as principal investigator. In this study, volunteers were asked to eat either raw food or a cooked-food diet. The results showed that when people ate raw foods, their white blood cell count remained the same; but when they ate processed foods (cooked meats and cheeses), their white blood cell count increased dramatically.

Dr. Kouchakoff discovered that when a person eats cooked food, his/her blood responds immediately by increasing the number of white blood cells. This increase is a defense mechanism that helps the body fight off foreign invaders like bacteria and viruses. The white blood cells are produced by the bone marrow, which also produces red blood cells. Since the bone marrow does not have enough time to produce extra red blood cells when people eat cooked food their white blood cell count increases instead.

This is a well-known process called “digestive leukocytosis”, which means white blood cells (leucocytes) increase in number after eating. There are many types of white blood cells that help fight disease. These include neutrophils, basophils, and eosinophils. Neutrophils are the most common type of white blood cell, making up between 50% and 70% of all leukocytes in the body. They are also the first to arrive at any kind of infection or injury site. When they arrive they release enzymes that kill bacteria and other micro-organisms.

Because digestive leukocytosis occurred after eating and was the body’s normal response to food, it was assumed that this reaction never varied from person to person. No one knew why white blood cell counts tended to go up after eating, since this was a stress response—as if the body were responding to some sort of infection. In fact, it is only when the body is under stress that white blood cells go up. This increase in white blood cell counts happens as a result of eating. The body responds to food by releasing chemicals called histamines; these are responsible for inflammation and allergic reactions.

In 1930, Swiss researchers from the Institute of Chemical Chemistry studied how food affects human blood and made a remarkable discovery. They found that unaltered raw foods or those heated at very low temperatures do not cause an immune response in humans. However, when they heated the food to higher temperatures (above 118 degrees), they found that the body responded by releasing histamines. Foods that had been heated or processed always caused a rise in white blood cells, no matter the temperature. The researchers discovered that when food is cooked at high temperatures, it releases a protein called trypsin inhibitor. This substance can cause an allergic reaction in anyone who is sensitive to it.

They rechristened the reaction “pathological leukocytosis” and found that it occurred only when highly altered foods were consumed. If food was not overheated or refined, they found that the body saw it as a friendly substance and produced no such response. This was a groundbreaking discovery. However, these same foods caused a negative reaction in the blood only when heated to very high temperatures—a temperature level that is also harmful to human bodies.

The Worst Offenders

All foods that have been processed, refined, homogenized, or changed from their original state are unhealthy. So what is the worst offender? The worst offender by far is refined sugar. Sugar causes all of the same reactions that a hot, highly processed food would cause. This includes increased heart rate and stress on your body’s organs (especially the liver). So what is the worst offender? The worst offender by far is refined sugar.

Good examples of the most harmful foods outside of sugar are processed flour, white rice, pasteurized milk, chocolate, margarine, sugar-based candy, and other sweet treats.

There is also evidence that if some of the same food eaten in its raw state were consumed with cooked versions, blood pathology would be minimized. However, avoid unnatural processed foods; replace them with whole delicious ones for optimal health.

Food For Thought

Don’t try to switch completely to an all-raw food diet too fast. Most people can begin by eating 50% of their food uncooked, especially fresh fruit in the morning, and including a salad made from fresh vegetables at lunchtime. If you are looking at an all-raw food diet, start by adding more fresh fruit to your diet. Fruit is a great introduction to raw foods because of its high water content and sweetness, which makes it much easier for the body to digest than vegetables or nuts. If you are already eating plenty of fruit then move on to eating some leafy green vegetables or salads with cucumbers, peppers, tomatoes, and other raw vegetables.

PIZZA – Recipe includes crust, sauce’s , cheeses, toppings and 

EQUIPMENT NEEDED: food processor
RAW LIVING CRUST:
[You can have this ready up to 3 days before use. Crust will last for four weeks.)
ORGANIC INGREDIENTS
1 ½ cups sprouted buckwheat groats 
(soaked for 20 minutes)
2/3 cup carrot pulp 
2/3 cup soaked flax seeds 
¼ cup olive oil 
¼ cup water or Rejuvelac 
DIRECTIONS:
1. In a blender, combine groats, olive oil, carrot pulp, flax seeds and water or Rejuvelac. 
2. Blend using a spoon or rubber scraper to mix occasionally.
3. On a dehydrator tray covered with Teflex or parchment paper spread mixture out. 
4. Use wet hands to spread the mixture evenly.
5. Dehydrate the crust at full heat for 1 hour, then 
6. Decrease to 110 degrees for 7- 8 hours.
7. Transfer crust to a mesh dehydrator tray 
8. Dry for 10 -12 hours checking occasionally to see if it is fully dry.

ITALIAN HERB – MOZZARELLA CHEESE
[Can make up to two days before use]
ORGANIC INGREDIENTS:
10 Macadamia nuts
½ cup sprouted sunflower seeds
½ teaspoon dill seeds
1 teaspoon sea salt
1 clove of garlic
½ lemon, juice of (or raw apple cider vinegar)
¼ cup of Rejuvelac

Preparation
1. Soak Macadamia nuts overnight
2. Soak ½ cup of Sunflower seeds for 6 hours, sprout them for 24 hours
3. Blend all ingredients adding Rejuvelac to get the desired consistency
4. Place in a cheesecloth or a sprout bag for 24 hours to age. Then refrigerate. 

RAW LIVING PIZZA SAUCE 
4 tomatoes 
¼ cup of alfalfa sprouts
1 teaspoon minced garlic
4 dates or 2 T of raw agave
¾ teaspoon onion powder
¼ teaspoon dried oregano
¼ teaspoon dried marjoram
¼ teaspoon dried basil
¼ teaspoon ground black pepper
1/8 teaspoon cayenne pepper
1/8 teaspoon dried red pepper flakes
Sea salt to taste
1 cup of warm water or Rejuvelac (110 -115 degrees)

Preparation 
Blend and let sit for 30 minutes before putting sauce on the pizza. 
Make sure you put cheese on first. 

VEGETABLE TOPPINGS: dice or slice; and sprinkle on

PRIOR PLANNING:
Make rejuvelac ahead so it will be ready to use.
Cheese recipe takes two days to ferment before serving.

EQUIPMENT NEEDED: cheese cloth, food processor
ORGANIC INGREDIENTS:
10 Macadamia nuts, soaked
1/2 cup sprouted sunflower seeds, hulled
½ teaspoon dill seeds
½ teaspoon sea salt
1 clove garlic
¼ cup lemon juice. (use raw apple cider vinegar, if preferred)
¼ cup of Rejuvelac

DIRECTIONS:
1. Soak Macadamia nuts overnight;
2. Soak ½ cup of Sunflower seeds for 6 hours, sprout them for 24 hours;
3. Blend all ingredients, adding Rejuvelac to get desired creamy consistency;
4. Strain through a cheese cloth, and drain. 
5. Place in a cheese cloth or a sprout bag for 24-48 hours to ferment; drain periodically.
6. Then refrigerate or serve.

BASIC PESTO SAUCE

EQUIPMENT NEEDED: blender

ORGANIC INGREDIENTS
1 ¼ cups cashews, soaked overnight (at least 4-6 hours)
¼ cup alfalfa sprouts
2 cloves garlic
2 tablespoons pine nuts
1 ½ tablespoons lemon juice
1 ½ cups basil
Mix all in a food processor or blender and add water or rejuvelac – just enough to make the desired consistency

DIRECTIONS:
1. Blend all marinade ingredients together in blender;
2. Pour over mushrooms and marinate for approximately 10 minutes or more;
3. While marinating, make pesto;
4. Fill each mushroom with pesto. 
5. Put in dehydrator at 105° till dinner-time.

If You Like Tuna Fish – You Are Going To Love, Dr. Ann’s Better Than Tuna. You can whip up a pound of this fantastic food in about 10 minutes. (Its best to let it set for about 30 minutes before eating. If you can with that long) . Keeps fresh and delicious in the refrigerator for a week.

Recipe:

  • 1 lb. Almonds, soaked
  • 4 Bunches Celery Hearts
  • 1 Large Onion, Sweet
  • 1 tablespoon Plemento (optional)
  • 1/2 cup Lemon Juice
  • ½ Cup Dill Weed, dry
  • 2 tablespoons of Dulse or Kelp
  • 1 tsp Celtic, Himalayan or quality Sea Salt (or to taste)

. Use a food processor or Champion Juicer with the blank attachment.
. Alternate onion, celery & almonds if you are using the Champion juicer.
. Add remaining ingredients and mix well. Let set 30 min. Serve on a bed of lettuce, then garnish with tomatoes and sprouts. ( you should always be sprouting at least alfalfa sprouts)

Simple Healthful Herbs And Healing Foods For Your Children

One of our past guests had just become a new grandmother and she asked my opinion on raw living foods for children and if children could eat herbs when they were sick. That is why I am writing this article  — because she asked me to help her and because I thought some of our other past guests and readers could benefit from how I answered her questions.

Keeping our children healthy is our primary purpose as parents and grandparents.  The living foods lifestyle is the strongest health foundation you can give your child, yet there are times when parents must consider additional modalities when helping their children through an illness.  It’s my hope that you will never have to use any of the following herbs or concoctions, but if you do, keep in mind herbs can interact with other herbs, supplements and/or medications. For these reasons, you should only give herbs to a child when under the supervision of a health care practitioner. So if you do want to use these time-tested protocols, please consult your healthcare provider for diagnosis and medical advice before giving them to your children.

The following list of symptoms and the herbs and concoctions used to address them is by no means meant to be a comprehensive listing and only reflects some of the protocols I am personally aware of.  If you have found other simple protocols please feel free to add them to the comments.  I would love to hear from you.

Herbs and Protocols

Colic:  When your child cries for extended periods (1-2 hours), pulls its legs up to the belly, or extends its legs out and will not calm down they may be experiencing colic.  Mild, yet effective herbal teas made from Anise, Catnip, Caraway or Fennel and Peppermint have been used by mothers to soothe their children’s colic.

Colds: When your child is suffering from a cold you also suffer.  All of these herbs and concoctions will really help your child when they are fighting a cold. Your first line of defense should be used early and often. Echinacea is a great all round herb which provides immune support and may help protect your child from viral and bacterial infections.   I also like Anise as it will help with breaking up the mucus and make it easier for your child to breath and get mucus out of his/her body.  You may also want to make a Chamomile tea, infused with peppermint, licorice and lemon balm. This concoction will help calm your child’s cough and works as an expectorant. If your child is older you may want to talk to your health care provider about Mullen tea.

Constipation:  Good hydration is the most effective way to relieve constipation and this is easy to achieve when your child is getting plenty of pure water along with raw fruits and vegetables which contain large amounts of water. Also, a blend of Chamomile and Marigold teas will help prevent constipation, while gently helping your little one’s bowels to move.  Two other good herbs are aloe and Sienna both possesses laxative action and act on your child’s large intestine to stimulate peristalsis.

Cough: When your child coughs it is a sign that his/her body is attempting to an inflamed (croup- dry cough) or mucus congested airway (wet cough).  All of the herbal remedies I’m sharing with you will decrease inflammation, reduce mucus production and have a soothing relaxing effect that quickly helps stop the coughing.   Warm herbal tea with licorice, honey (only give honey to children who are at least 1 year old) and a little lemon juice is excellent for helping ease the tickle that sets off a cough.  Children of all ages who have coughs benefit from running a humidifier with eucalyptus oil in the water as it will break up mucus and soothe your child’s coughing reflex.  Make sure the humidifier is out of your child’s reach, or use a cold humidifier.  Also, if your child is over 1 year old give them a spoonful of honey with a little lemon mixed in before they go to bed as this will help alleviate soreness.  There are many wonderful natural herbal cough syrups that you can make or purchase.  Contact your health care for recipes and suggestions.  Don’t forget to keep checking your child’s temperature and to keep him/her hydrated.

Cradle Cap: Consists of dead skin cells which remain attached to your babies head. These dead skin cells block your baby’s pores and mix with body oils.  Cradle Cap usually appears within the first days of your child’s life.  Your child will not usually experience itching or pain with Cradle Cap.  Before bedtime you can rinse your baby’s head with a simple warm mixture of  Calendula and Comfrey, then let the baby’s scalp air dry, then massage organic olive oil mixed with lavender and mullein into the scalp and leave it in overnight, wash it away with mild natural soap and water each morning. The Cradle Cap should disappear within a few days.  Seborrhea- is a form of Cradle Cap that has formed on other areas of the body.

Diaper Rash:  Is usually caused by a diaper containing urine/stool and the material of the diaper rubbing against the child’s skin.  The way to identify this type of rash is to look at the folds of the skin (which are more protected) if they are not red, you have diaper rash caused by simple irritation.   Most other diaper rashes are caused by yeast or bacterial infections. The yeast rash will show up bright red, often with small red pimples on the outer edges.  The bacterial rash will have fluid-filled pimples which look yellowish with some crusty areas.

Diarrhea: As your child begins to eat different combinations of foods the bowels sometime will react and your child may get diarrhea. To alleviate the discomfort associated with diarrhea, you may want to have your child eat fresh grated raw or lightly steamed carrots, mixed with equal parts applesauce (include the apple’s skin).  I also like raspberry and peppermint tea blended, as this concoction helps to stop cramping, calms diarrhea and will also help lower a fever.

Earache: If your child experiences regular earaches or earaches which last more than 12 hours be sure to contact your physician.  Usually, earaches accompany colds and coughs. If you are a smoker stop!  Smoke from cigarettes plays a major role in many children’s earaches.  Before giving your child herbs or medications, try sitting him/her up and placing a cool washcloth on the ear that is troubling them.  If your child is old enough to chew gum give him/her a piece of herbal chewing gum, as this can sometimes lower the pain. As long as your child’s eardrum is not punctured you may want to warm some olive oil and add a few drops of grapefruit seed extract along with a drop of garlic and tea tree oil. Place a piece of warm cotton in the ear and lay a warm, slightly damp cloth over the ear and begin a vaporizer that has eucalyptus oil in it. You may repeat putting on warm clothes until your child’s ear stops hurting.  Should your child’s earache not subside, you should contact your physician.

Teething: Children seeking comfort from the pain of teething can use lemon balm as a tea or can chew on a washcloth soaked in the tea.

Energy Soup – Your Way!

 Leafy Greens – Spinach, kale, swiss chard or any of your favorite leafy greens. Make sure to look for wild greens, as they have amazing nutritional properties.

 Raw Vegetables – zucchini, cucumber, asparagus, bell peppers, broccoli, or any other raw vegetable, adding at least 1-2 of them to the the greens. If you do not have a problem with night-shades try adding some tomatoes.

 Raw Fruits – Choose your favorite fruit. We love apples, pears and mangoes, but you can choose your favorite fruit to make your energy soup your own.. My standard is apples and I add only a single apple along with an inch of fresh ginger to make a pitcher of sweet energy soup.

 Flavor Enhancers – Dulse, kelp and other sea vegetables really being up the flavor of the soup and are an excellent source of minerals. Raw onions and garlic add delicious flavor to soup. Fresh ginger is always a favorite and when making a sweet soup,you may even want to add a touch of cinnamon or nutmeg to garnish your soup

 Fresh Herbs – Basil, oregano, Italian seasoning, or cilantro; experiment with your favorite herbs. You may want to use no more than two different herbs as you don’t want to make the soups flavor too complex.

 Fresh Lemon Juice – Lemon juice is extremely alkalizing to the body and adds a subtle tang to your soup.

 Nut & Seed & Avocado Cream – You can simply add the avocado to make the soup creamer. To increase the protein content of the soup experiment with seed and nut creams or just as some of your favorite nuts and seeds to the soup and blend in. My favorite is hemp.

 Unprocessed Sea Salt and Pepper – A little touch of sea salt will enhance the flavor of your soup. Go easy on the salt and use more duse or kelp as enhancers. Regular iodized table salt is heavily processed, so opt for sea salt instead. Crushed black pepper adds a nice addition, as does cayenne pepper if you like your soup spicy.

 Rejuvelac or Water. You need to add some liquid to get your soup to the consistency you like. How thick you want your soup is totally up to you. Here at CHI we always use rejuvelac as part of our soup base. Its amazing how wonderful it makes the soup taste, while making it I like a thick, creamy soup.

Raw Chia Everything Bagels

Bagels

2 large onions, chopped

1/2 cup finely chopped (or processed) celery

2 cups Brazil nuts, soaked  24 hours

3/4 cup olive oil

3/4 cup ground chia seed

1/3 cup water

1 teaspoon sea salt

1 teaspoon black pepper

1 teaspoon dill

1 tablespoon nutritional yeast

3 cloves garlic, peeled

1 teaspoon of Bob’s Red Mill Organic baking soda
OPTIONAL: 1/2 teaspoon chipotle, cayenne or chile pepper of choice

Brazil Nut Butter Cheese:

2/3 cup Brazil nut butter (make this by blending Brazil nuts in a food processor until creamy)

2 tablespoons + 1 teaspoon freshly squeezed lemon juice

1 tablespoon + 1 teaspoon spring water

2 teaspoons hemp seeds

dash of sea salt

Bagel Instructions:

 

Mix ingredients with a spatula in a bowl

Push through a Champion juicer or process in a food processor.

Shape into bagels (no more than 1/2 an inch thick, though!)

Let dehydrate for 8 to 14 hours at 110 degrees until desired texture (flipping half way through for even dehydration)

There are those who say your body does a good enough job of detoxifying without needing to do colonics, or any other type of bowel cleansing. That may have been true 50 years ago, but unfortunately that is not our situation today. Most of us live stressed filled lives, live in which we are exposed to so many chemicals, pesticides, heavy metals, toxic residues in our environment and our foods. To reclaim our health we must do everything we can to bring the body into homeostasis, which includes paying attention to the health of our colon.

Colon hydrotherapy is a gentle internal bath using warm purified water to cleanse the anus, rectum, sigmoid colon, descending colon, transverse colon, ascending colon, and the caecum.

How Many Treatments Will I Need?

Will I Be Embarrassed?

Fact: Our colonics room is en-suite, so there’s changing and toilet facilities right where you need them.
Fact: You will remove your lower garments while in complete privacy and then lie on the colonic table and cover yourself with a warm blanket, sheet or both. Then and only then will your therapist enter the room.
Fact: Your therapist will then only uncover the small area where the speculum will be inserted. The therapist will do a quick visual check for any hemorrhoids, etc. From this point on you will be completely covered.

Are Colonics Painful?

Fact: Some people, if they have large internal or external hemorrhoids may experience a slight irritation or pressure sensation when the speculum is initially inserted. Your therapist will work to make the experience comfortable.
Fact:  When the bowels are impacted or you have had chronic constipation there may be some cramping when the colonic first begins. This will not last more than a few seconds. Your therapist will be monitoring your comfort level and will regulate the flow of the water, so you will not experience cramping.
Fact: Your therapist will do some ‘fills’ – where the water goes and you will feel an increased pressure in your bowel. When you feel like you need to go to the toilet your therapist will release the water the moment you tell them to. Your therapist is a trained professional and will be continually monitoring your progress and comfort levels.

 Can Colonics Perforate My Bowel?

 Fact: No

Fact: A normal bowel movement can build pressures of about 1.5 pounds per square inch.
Fact: A standard hospital enema applies pressure at about 2 pounds per square inch.
Fact: Our gravity-fed colonic system introduces water at a pressure of about 1.5 – 2 pounds per square inch.

Can I Catch Disease From Having A Colonic?

Fact: The water used for your therapy is clean double filtered.
Fact: Your colonic is performed using a disposable speculum and hose kit. For those who are use to a standard metal speculum which utilizes clinical heat sterilization which exceeds health department standards, insuring a safe therapy session, you may request your therapist to use this speculum instead of the disposable speculum.

 Don’t Colonics Remove The Good Bacteria From My Bowel?

Fact: Colonics wash out both the good and bad bacteria as well as any trapped gases, waste matter and toxins.

Fact: Your body will immediately begin to place good bacteria into your bowels. To ensure that the bowel flora is as healthy as possible we will provide a probiotic supplement at the end of your colonic therapy. You may choose a probiotic in the form of a capsule, or utilize the rejuvelac which we prepare for you.

Will I Need To Be Near A Toilet After My Colonic Therapy?

Simple Healthful Herbs And Healing Foods For Your Children

 

 

One of our past guests had just become a new grandmother and she asked my opinion on raw living foods for children and if children could eat herbs when they were sick. That is why I am writing this article  — because she asked me to help her and because I thought some of our other past guests and readers could benefit from how I answered her questions.

Keeping our children healthy is our primary purpose as parents and grandparents.  The living foods lifestyle is the strongest health foundation you can give your child, yet there are times when parents must consider additional modalities when helping their children through an illness.  It’s my hope that you will never have to use any of the following herbs or concoctions, but if you do, keep in mind that herbs can interact with other herbs, supplements and/or medications. For these reasons, you should only give herbs to a child when under the supervision of a health care practitioner. So if you do want to use these time-tested protocols, please consult your healthcare provider for diagnosis and medical advice before giving them to your children.

The following list of symptoms and the herbs and concoctions used to address them is by no means meant to be a comprehensive listing and only reflects some of the protocols I am personally aware of.  If you have found other simple protocols please feel free to add them to the comments.  I would love to hear from you.

Herbs and Protocols

Colic:  When your child cries for extended periods (1-2 hours), pulls its legs up to the belly, or extends its legs out and will not calm down they may be experiencing colic.  Mild, yet effective herbal teas made from Anise, Catnip, Caraway or Fennel, and Peppermint have been used by mothers to sooth their children’s colic.

Colds: When your child is suffering from a cold you also suffer.  All of these herb and concoctions will really help your child when they are fighting a cold. Your first line of defense should be used early and often. Echinacea is a great all round herb which provides immune support and may help protect your child from viral and bacterial infections.   I also like Anise  as it will help with breaking up the mucus and make it easier for your child to breath and  get the mucous out of his/her body.  You may also want to make a Chamomile tea, infused with peppermint, licorice and lemon balm. This concoction will help calm your child’s cough and works as an expectorant. If your child is older you may want to talk to your health care provider about Mullen tea.

Constipation:  Good hydration is the most effective way to relive constipation and this is easy to achieve, when your child is getting plenty of pure water along with raw fruits and vegetables which contain large amounts of water. Also a blend of Chamomile and Marigold teas will help prevent constipation, while gently helping your little one’s bowels to move.  Two other good herbs are aloe and sienna both possesses laxative action and act on your child’s large intestine to stimulate peristalsis.

Cough:When your child coughs it is a sign that his/her body is attempting to an inflamed (croup- dry cough) or mucus congested airway (wet cough).  All of the herbal remedies I’m sharing with you will decrease inflammation, reduce mucus production and have a soothing relaxing affect that quickly helps stop the coughing.   Warm herbal tea with licorice, honey (only give honey to children who are at least 1 years old) and a little lemon juice is excellent for helping ease the tickle that sets off a cough.  Children of all ages who have coughs benefit from running a humidifier with eucalyptus oil in the water as it will break up mucus and soothe your child’s coughing reflex.  Make sure the humidifier is out of your child’s reach, or use a cold humidifier.  Also, if your child is over 1 years old give them a spoonful of honey with a little lemon mixed in before they go to bed as this will help alleviate soreness.  There are many wonderful natural herbal cough syrups that you can make or purchase.  Contact your health care for recipes and suggestions.  Don’t forget to keep checking your child’s temperature and to keep him/her hydrated.

Cradle Cap: Consists of dead skin cells which remain attached to your babies head. These dead skin cells block your baby’s pores and mix with body oils.  Cradle Cap usually appears within the first days of your child’s life.  Your child will not usually experience itching or pain with Cradle Cap.  Before bedtime you can rinse your baby’s head with a simple warm mixture of  Alendula and Comfrey, then let the baby’s scalp air dry, then massage organic olive oil mixed with lavender and mullein into the scalp and leave it in overnight, wash it away with mild natural soap and water each morning. The Cradle Cap should disappear within a few days.  Seborrhea- is a form of Cradle Cap that has formed on other areas of the body.

Diaper Rash:  Is usually caused by a diaper containing urine/stool and the material of the diaper rubbing against the child’s skin.  The way to identify this type of rash is to look at the folds of the skin (which are more protected) if they are not red, you have diaper rash caused by simple irritation.   Most other diaper rashes are cause by yeast or bacterial infections. The yeast rash will show up bright red, often with small red pimples on the outer edges.  The bacterial rash will have fluid-filled pimples which look yellowish with some crusty areas.

Diarrhea: As your child begins to eat different combinations of foods the bowels sometime will react and your child may get diarrhea. To alleviate the discomfort associated with diarrhea, you may want to have your child eat fresh grated raw or lightly steamed carrots, mixed with equal parts applesauce (include the apples skin).  I also like raspberry and peppermint tea blended, as this concoction helps to stop cramping, calms diarrhea and will also help lower a fever.

Earache: If your child experiences regular earaches or earaches which last more than 12 hours be sure to contact your physician.  Usually earaches accompany colds and coughs. If you are a smoker stop!  Smoke from cigarettes plays a major role in many children’s earaches.  Before giving your child herbs or medications, try sitting him/her up and placing a cool washcloth on the ear that is troubling them.  If your child is old enough to chew gum  give him/her a piece of herbal chewing gum, as this can sometimes lower the pain. As long as your child’s eardrum is not punctured you may want to warm some olive oil and add a few drops of grapefruit seed extract along with a drop of garlic and tea tree oil. Place a piece of warm cotton in the ear and lay a warm, slightly damp cloth over the ear and begin a vaporizer that has eucalyptus oil in it. You may repeat putting on warm cloths until your child ear stops hurting.  Should your child’s earache not subside, you should contact your physician.

Teething:Children seeking comfort from the pain of teething can use lemon balm as a tea or can chew on a washcloth soaked in the tea.

The easiest and most popular appliance is a high speed blender.  This is key to a raw living foodist – what a stove is to a a professional chef.  You’ll make smoothies, shakes and soups within minutes.  And you’ll use it many times a day.  The two brands most used are Vitamix and Blendtec.  They’re equally good.  There is also a new blender that is sold by Montel Willam’s company and shows great promise. The best raw living food juicer depends on what you expect to be juicing most.  Carrots are easiest in a centrifuge juicer, whereas wheatgrass and green leafy vegetables go best in a twin gear or single auger juicer.  If you have a juice bar around the corner and as long as you can get the volume of juice you need to support your lifestyle, you may choose to buy your juice already made instead of investing in a good juicer, the problem is that you will be most likely missing out on enzymes and other nutrients. If you buy a centrifuge juicer, make sure you buy one with a wide mouth so you can juice whole apples and carrots without any pre-cutting.  There are many inexpensive centrifuge juicers, so find one that suits your needs and budget.  To date, the most frequently used twin gear juicer is the Greenstar Juicer. A dehydrator is a fun tool, and difficult to live without for a raw living foodest!  For intermediate to advanced raw living foodests, a dehydrator is essential for making breads, cookies and  snacks.  The Excalibur dehydrator is the most popular and you should get a model large enough to make enough dehydrated recipes to last you through out the week or up to a month. Having access to your own spring – pure, raw, living water – would be ideal, unfortunately that is not really feasible for most of us!  Alternatively, a water purifier is something you might consider.  It’s more economical and ecological than buying bottled water, and when you purify your own water you know you are getting the best quality water, for you and your family.  You can buy a good a tap filter, or under-counter model, and don’t forget the bathtub and shower chlorine-filter, since your skin is your largest organ and absorbs the water that you bath in.  You may even want to spend some extra money adding an ionizer. A food processor is fun and necessary if you are going to eat 80%+ raw living food and make gourmet foods.  For small jobs, here at Creative Health Institute we find it’s just as easy to use a knife or the much cheaper and smaller mandolin or spiral slicer.  When you have a lot of slicing, dicing and mixing to do, nothing beats a food processor.  So if you have space and a few extra dollars, we recommend buying one, but it’s not as important as a good blender in a raw living food kitchen. A coffee grinder is great for finely grinding nuts, seeds and cacao beans in smaller quantities.  A grinder is small and relatively inexpensive.  It’s not an absolute must in a raw living food kitchen, but is so inexpensive that not having one would just be a personal preference choice. I love the hand blender!  To me, it’s a simple and cheap version of a table model, high speed blender.  If you have a Cuisinart hand blender you can take it on trips and with 700 Watts, you can use it where you’d use the high speed blenders, although your mixtures won’t be as smooth and the cell walls of the food you blending won’t be broken down as efficiently as with a high speed table model.  However, it  really does the job for traveling, for making green smoothies, energy soups, quick pestos and small amounts of sauce, etc., making it easy for you to never miss out on the yummy raw living food dishes you will come to love. Creative Health Institute’s Programs Support The Elimination Of Toxins And Good Colon Health

Dr. Ann Wigmore said, “Disease begins in the colon”.

There’s a lot of misinformation about how raw living foods, enemas and colonics play a major part in bringing our bodies into the healthiest state possible. Every week I receive calls about our program which invariably leads to discussions about enemas and colonics. It’s my desire to answer the hard questions about these two subjects and help you have a better understanding what it takes to insure every part of  your body especially you colon is healthy.

The world has really changed in the past 100 years our air, water and food sources no longer are able to contribute to our health as they once did. Our ancestors did not have to deal with the problems associated with the kind of toxins and unhealthful environments we are faced with every day.  S0, when you hear someone say your body is naturally equipped to handle the elimination of toxic substances, remind them the world has changed and the standard American diet (SAD) and our 21st century lifestyle demands we pay better attention to every aspect of our health, including our colon.

For those of us who want to have a healthy body and a toxic free colon, we have to overcome the misinformation surrounding colon health.  I hope todays article will help you  understand the wonderful health that awaits you, as you come to understand how amazingly simple it is to bring your body in to perfect balance by simply eating raw living foods and cleansing your colon with enemas and colonics.

Enemas and colonics are similar therapies which utilize water to cleanse the colon. Both therapies offer wonderful ways to enhance our health and can be used in conjunction with each other, but not at the same time.  The main differences between enemas and colonics are that an enema usually can only cleanse the lower part of the colon, while colonics cleanse the entire length of the colon.

When we visit a colon therapist we will be able to relax and let them do the work.  She/he will perform the colonic which will consist of a single insertion of the speculum and multiple controlled infusions of water so the entire colon is cleansed during the colonic session, which usually lasts from 45 -60 minutes. Enemas can be self-administered and if done properly effectively cleanse the lower bowel (descending and sigmoid colon) and are completed in just a few minutes.  Here at Creative Health Institute our health instructors teach our students and guests how to effectively carry out this simple, but effective therapy and we have a professional colonic therapist available around the clock.

Some of the main differences between the enema and colonic therapies are:

  • Enemas do not have to be administered by a professional. You can administer them yourself or have assistance is necessary.
  •  An enema involves the one-time infusion of water. It sits in the lower part of the colon for period of time, and then the person sits on the toilet.
  • Enema kits are available at your local drugstore. You can also purchase them on line
  • Colonics are administered by a professional.
  • Water is administered through a special device called a speculum.
  • Fecal matter leaves the body via a tube and you will not see or smell the fecal matter during the session.
  • At the end of the session, you will sit on a toilet and pass any residual water and fecal matter.

Creative Health Institutes Teaching On COPD Chronic Obstructive Pulmonary Disease

Many people come to Creative Health Institute to learn how to get relief from COPD. We have a complete training program for those who need help or would like to help those who suffer from this terrible disease.

Causes of COPD
The primary causes of COPD is long term cigarette smoking, the more years you smoke and the more packs you smoke, the greater your risk. Symptoms of COPD usually appear about 10 years after you start smoking, but other irritants can cause COPD including second hand smoke, occupational dust, vapors, hazardous fumes, asbestos as well as air pollution have all been shown to be contributing factors. In very rare cases, COPD results from a genetic disorder that causes low levels of a protein called alpha-1-antitrypsin.

Early Warning Signs
Early warning signs of COPD are unique to each person and you may not even realize that you are having trouble breathing. Therefore we have put together some signs to watch for. If you find that you have any of these symptoms you may want to talk to your doctor since a change, combination or increase in the symptoms I have listed may be an early warning sign of COPD.

Are You Experiencing One Or More Of The Following:
1. An increase in the amount of sputum produced (Sputum: The mucus and other matter brought up from the lungs, bronchi, and trachea that one may cough up and spit out or swallow)
2. An increase in the thickness or stickiness of sputum
3. A change in sputum color to yellow or green or the presence of blood in the sputum
4. An increase in the severity of shortness of breath, cough and/or wheezing
5. Using more pillows or sleeping in a chair instead of a bed to avoid shortness of breath
6. A general feeling of ill health
7. Ankle swelling
8. Forgetfulness, confusion, slurring of speech and sleepiness
9. Increasing morning headaches, dizzy spells, restlessness
10. Trouble sleeping
11. An unexplained increase or decrease in weight
12. Increased feeling of fatigue and lack of energy that is persistent
13. A lack of sexual drive

Once COPD has been diagnosed, early treatment is most effective, timely assessment of your symptoms can help you and your healthcare provider decide the type of treatment that will most benefit you.

Many of our guests have chosen to augment their treatment of COPD with more holistic approaches designed to strengthening their immune systems. They feel that eating raw living foods diet, drinking wheatgrass and taking wheatgrass baths, enemas and implants, help to alleviate many of their COPD symptoms. Herbs & Supplements
1. Comfrey leaves – help because they stimulate new cell growth and support quick healing. This makes it an excellent natural remedy for the lungs. It inhibits the cough reflex, softens and soothes damaged and inflamed bronchial mucus membranes. It helps to loosen mucus from the bronchial tubes so that it does not accumulate. You can buy comfrey leaf or root in various forms. Check with your Doctor before taking this herb.
2. Black tea – many COPD sufferers turn to tea for relief from tightening in the chest. Black tea contains chemicals related to the stimulant theophylline, which is also the basis of many modern medical remedies. Three or four cups of black tea can open airway passages and ease breathing.
3. Ginkgo – when used regularly the active ingredient has helped some patients to cut down on prescribed medication. Taken three times a day for a week or a month at a time. Ginkgo helps relax the lungs and keeps the breathing passage clear. Check with your Doctor before taking this herb.
4. Vitamin C and magnesium – improves lung function.
5. Pleurisy Root – possesses a specific action on the lungs, assisting expectoration, subduing inflammation and exerting a general mild tonic effect on the system, making it valuable in all chest complaints. It is of great use in pleurisy, mitigating the pain and relieving the difficulty of breathing, and is also recommended in pulmonary catarrh. The infusion may be prepared by taking 1 teaspoonful of the powder in a cupful of boiling water. The decoction is taken in doses of 2 to 3 fluid ounces. The dose of the fluid extract is 1/2 to 1 drachm; of Asclepin, 1 to 4 grains. A much-recommended herbal recipe is: Essence of composition powder, 1 OZ.; fluid extract of Pleurisy Root, 1 OZ. Mix and take a teaspoonful three or four times daily in warm water. Doctor before taking this herb.
6. Yerba Santa Holy Herb – medicines prepared with it or its extracts to treat bronchial and laryngeal problems. In addition, in combination with other herbs such as Grindelia robusta (good for Asthmatic bronchitis) yerba santa is also effective in curing insistent pulmonary infections, hay fever and asthma. There is no proven safe or effective dose for yerba santa in adults. Traditionally, 1-2 milliliters of fluid extract has been taken by mouth with a spoon every 3-4 hours for no more than ten days.

My Toughts About Cellular Malfunction

Here is something to think about… Could all diseases and sicknesses be based in cellular malfunction? I have listed 10 reasons that I feel lend some credence to this train of thought.

Dr Ann Wigmore taught us that all disease is based in deficiency and toxicity. If this is true then it makes sense the first thing to suffer the effects of deficiency and toxicity would be our cells. WHEATGRASS JUICE…

Increases red blood-cell count and lowers blood pressure. It cleanses the blood, organs and gastrointestinal tract of debris. Dr. Yoshihide Hagiwara, president of the Hagiwara Institute of Health in Japan, is a leading advocate for the use of grass as food and medicine. He reasons that since chlorophyll is soluble in fat particles, and fat particles are absorbed directly into the blood via the lymphatic system, that chlorophyll can also be absorbed in this way. In other words, when the “blood” of plants is absorbed in humans it is transformed into human blood, which transports nutrients to every cell of the body.

When used as a rectal implant, reverses damage from inside the lower bowel. An implant is a small amount of juice held in the lower bowel for about 20 minutes. In the case of illness, wheatgrass implants stimulate a rapid cleansing of the lower bowel and draw out accumulations of debris.

Externally applied to the skin can help eliminate itching almost immediately.

Will soothe sunburned skin and act as a disinfectant. Rubbed into the scalp before a shampoo, it will help mend damaged hair and alleviate itchy, scaly, scalp conditions.

Those of us in the raw living foods community who have been diagnosed with Multiple Sclerosis don’t have quite as much company as the raw foodists who battle cancer, diabetes and some of other common illnesses. We hear about raw food victories over Multiple Sclerosis second or third hand and some of us can be living this raw food lifestyle for quite some time before we ever actually meet another raw foodist who has been diagnosed with Multiple Sclerosis. That’s why I’ve started a new community on Facebook for people in the raw food community who have been diagnosed with Multiple Sclerosis.

15 Food Combining Guidelines

Food Combining Guidelines

  1. Avoid eating carbohydrates, starches, sugar or sweet fruits with acid fruits.  Too many times we mix: (strawberries and bananas) (cereal with strawberries) (pineapple upside down cake).
  2. Avoid eating concentrated proteins with concentrated carbohydrates.  (meat and potatoes) 
  3. Do not consume two concentrated proteins at the same meal. (meat and cheese*) (nuts and cheese) (shrimp and steak) (avocado and nuts) 
  4. Do not consume fats with proteins. (cheese* and meat again) 
  5. Use fats sparingly.  Beware of many items in the store that say “no fat” in their sales pitch.  They wouldn’t contain fat anyway. (animal fats, dairy products, palm oil, cottonseed oil and coconut) 
  6. Do not eat acid fruits with proteins.  Some lemon juice is fine on proteins.  Avocados combine well with acid fruit, sub-acid fruit and greens. (pineapple and ham) (tomatoes, meat, noodles – goulash, spaghetti) 
  7. Do not combine sweet fruits with proteins, starches or acid fruits, a common dessert mistake. (bananas on cereals) (strawberries and bananas) (dried fruit dehydrates the stomach). 
  8. Eat only one concentrated starch at a meal (potatoes, corn, pumpkin, etc.). 
  9. Acid fruits may be used with sub-acid fruits.  Don’t combine fruits opposite ends; combine at mid-ground. 
  10. Sub-acid fruits may be used with sweet fruit. 
  11. Combine fruit only with lettuce and celery.  Lettuce and celery may even enhance fruit digestion. 
  12. Salads combine very well with proteins, oil and starches.  Greens should make up a majority of our diet.  They leave the stomach quickly unless weighed down by oily dressings.
  13. Sprouts are great.  The best way to eat grains: referring back to #12, salads go well with starches or grains, so sprouts are great with salad. 
  14. Do not consume melons with any other foods.  They move through the stomach in 20 minutes.  If melons don’t agree with you, try them alone. 
  15. Liquids should not be used at any meal.  Dilutes your digestive juices / Prevents us from chewing / Prevents us from secreting saliva.

You Are Controlled By Circadian ‘Believe It or Not’

It is now known that the molecular circadian clock can function within a single cell. At the same time, different cells may communicate with each other resulting in a synchronised output of electrical signaling.

Studies of circadian rhythms have turned up the following sometimes hard-to-believe information: 

  1. If we were to live in total darkness, we would fall into a cycle of days that last up to 25 hours or longer.
  2. Heart attacks are twice as likely to occur between 8 a.m. and 10 a.m. as between 4 a.m. and 6 a.m. and between 6 p.m. and 8 p.m.
  3. Body temperature is lowest before waking up in the morning, and highest in the late afternoon. A temperature of 99 degrees Fahrenheit might indicate fever at 7 a.m., but by 5 p.m. would be normal.
  4. People react more strongly to substances they’re allergic to around 11 p.m., while antihistamine drugs have the greatest impact in the morning.
  5. Eating one meal a day of 2,000 calories results in a weight loss when eaten as breakfast, but produces a weight gain as supper.
  6. Suicides peak in the morning and early afternoon.
  7. The length of time a person sleeps is related more closely to body temperature rhythms and bedtime than to how long the person has been awake. In experiments, even after being awake more than 20 hours, people free of time cues slept twice as long when they went to bed when their temperature was at its highest (in early evening) than when it was at its lowest (in the early morning).
  8. The senses of hearing, taste and smell are more acute at certain times of day. Studies show sensory acuity is highest at 3 a.m., falls off rapidly to a low at 6 a.m., then rises to another peak between 5 and 7 p.m. (This cycle is related to the hormone cycle; when steroid hormones are released, sensory acuity falls.) 
  9. Aspirin stays in the body longer when taken at 7 a.m. than when taken at 7 p.m.Body clocks are why doctors often prescribe taking medicines at certain times of day. For example, both aspirin and antihistamines work best taken in the morning. But some types of chemotherapy for cancer may be more effective and less toxic if administered at night.
  10. Women go into labor most often between 1:30 a.m. and 2:30 a.m. and least frequently about midday. Births between 2 p.m. and 4 p.m. are associated with increased probability of complications in both the baby and the mother.

A Brief History Of Wheatgrass

“Wheatgrass juice is the nectar of rejuvenation, the plasma of youth, the blood of all life. Throughout the history of wheatgrass, it has been recognized for its beneficial health effects.  Mankind has always known that livestock showed improved health and vigor when they feed on the young grasses of early spring.  Herdsmen have moved their livestock across every continent in search of the best grass for the their animals.

Today, grass is the world’s most widespread form of vegetation. There are over 9,000 species of grass found across the planet, covering more than 25% of all earths land mass. You will find grass wherever there is sun, water and soil. Grass has truly become recognized as the staff of life with four of the world’s top five crops being grains/grasses.

The use of wheatgrass can be traced back more than six thousand years, to ancient early Mesopotamian and Egyptian civilizations.

Five thousand years ago, Egyptians were using wheatgrass for health purposes. The Priests, Pharaohs and powerful members of ancient Egyptian society used wheatgrass on a regular basis, believing that it improved their health.

Nebuchadnezzar, king of the Babylonian Empire, and builder of the Hanging Gardens reigned  from 605 BC – 562 BC.,  reportedly restricted his diet to grasses and attributed the health benefits of this magnificent chlorophyll rich plant to the improvement of his physical and mental health.

Almost two thousand years ago, during the first century A.D., we find a Jewish sect known as the Essene’s using wheatgrass as a healing food.  From their holy book The Gospel of Peace, translated by Edmund Bordeaux Szekely, we read:

We may eat also of the tender blades of grass that the strength of the Earthly Mother may enter into us. But chew well the blades, for the Son of Man has teeth unlike those of beasts, and only when we chew well the blades of grass can the Angel of Water enter our blood and give us strength. Eat, then, Sons of Light, of this most perfect herb from the table of our Earthly Mother, that your days may be long upon the earth, for such finds favor in the eyes of God.”

Welcome to Wheatgrass Science in The 20th Century

In 1915 Dr. Richard Willstätter’s pioneering work on natural products; especially chlorophyll was honored with the 1915 Nobel Prize in chemistry. His founding of  the healthful link between the chlorophyll in plants and the hemoglobin in our blood, was the start of  scientific research into how close the composition of  chlorophyll and human blood are. He showed that chlorophyll molecules bonded in in a very similar way as  the iron molecule in hemoglobin.

Close to the time of  Dr. Willstätter’s work and discover of the wonder of chlorphyll,  in the laboratory, war had broken out across Europe and in the small county of Lithuania, a young girl named Ann Wigmore watched as her grandmother treated soldiers with it and later used wheatgrass to treat her own colon disease.

In the late 1920’s and early 1930’s scientists including Charles Francis Schnabel were studying grasses and green leafy vegetables and unlocking the nutritional mysteries. They tested all types of vegetable and meat based feeds and found that animals could did not only survive on grass but thrived on it, but, in contrast, their health failed when they were fed other healthy vegetables, including green leafy vegetables.

In 1931 Charles Francis Schnabel an American school teacher and agricultural chemist who is kindly referred to as the “father of wheatgrass” discovered  that wheat and barley grasses reached their nutritional peak at or just prior to the commencement of the jointing stage. Being an agricultural chemist, the focus of his studies were based in developing feeds for livestock which would  help them recover more quickly from sickness, grow faster and increase fertility. His research proved to be the the most indepth study of its time proving the nutritional value of grasses and how the nutritonal values changed through different stages of the plant’s life.

Struck by the power of wheatgrass, Charles Schnabel started promoting his discoveries to feed mills, chemists and the food industry. Two large corporations that are still with us today (Quaker Oats and American Dairies) invested millions of dollars into funding further research.  Joined by others, such as biochemist George Kohler, his passion inspired a body of scientific research and much of his research finding served as the basis of Dr. Ann Wigmores devleopment of wheatgrass therapy.

The “Wheatgrass Juice Factor”

In the mid 1930s, at the University of Wisconsin, Dr. George Kohler and his colleagues were studying the differences in the nutritional value of cow’s milk produced at different seasons of the year. Although they thrived on summer milk, experimental rats and guinea pigs failed to grow and eventually became sick and died when fed winter milk. The higher nutritional value of the summer milk was found to be due to the grasses eaten by the cows in the spring and summer. Thus began research on the “Grass Juice Factor”, a water soluble extract of grass juice which was responsible for this growth effect.

Most of the individual vitamins that we know about today, were identified during the 1930s by scientists working to identify all the nutritional factors necessary for growth and reproduction in humans and domestic animals.

Scientist were amazed to find that when they added green chlorophyll rich foods to the diets of test animals, the growth and health effects of cereal grass and the “Grass Juice Factor” were far our stripping any other type of supplementation. By the late 1930s, dehydrated and dried cereal grasses were available in several forms for use as a human and animal food supplements.

After many years of research and testing, the scientists at the  University of Wisconsin determine the highest levels of  the  “Grass Juice Factor”, was found in cereal grass (wheatgrass), young white clover, peas, and cabbage.

At the University of California at Berkeley, Dr. Mott Cannon and his colleagues found that guinea pigs failed rapidly when fed a stock ration plus high levels of all the then-known nutrients. When the researchers added standard food supplements such as liver extracts, wheat germ, and brewer’s yeast to the animals’ diets, the guinea pigs remained sick and often died. Addition of grass or grass juice brought about dramatic recovery and restimulated growth in these animals.

In 1935, Danish researchers discovered vitamin K, the “koagulation vitamin”. Because this nutrient was difficult to isolate in large quantities, cereal grasses were used in lieu of purified vitamin K—both for research and for medical therapy.

In 1938 Folic acid was identified, being named after the green leaves, or foliage, which proved to be its richest source. Scientists knew they were on to something as they observed the health and growth benefits that the known vitamins and minerals in the  cereal grasses provided.  Other benefits, however, could not be attributed to known nutrients.

In the early 1940’s, Dr. Charles Kettering (former chairman of the board of General Motors) donated money for the study of chlorophyll. Chlorophyll was studied intensively by medical doctors (there are currently over 40 articles written up in medical journals about the healing effects of chlorophyll.) These medical doctors found that chlorophyll was a great healer.

In 1940, in the American Journal of Surgery,  Benjamin Cruskin, M.D., recommends chlorophyll for its antiseptic benefits. The article suggests the following clinical uses for chlorophyll:

“To clear up foul-smelling odours, neutralize strep infections, heal wounds, hasten skin grafting, cure chronic sinusitis, overcome ear inflammation and infections, reduce varicose veins and heal leg ulcers, eliminate impetigo and other scabby eruptions, heal rectal sores, successfully treat inflammation of the uterine cervix, get rid of parasitic vaginal infections, reduce typhoid fever, and cure advanced pyorrhea in many cases”.

Through the 1940s and 1950s, scientist continued to research the potential of cereal grasses and their effect on humans and animals. Expanded research led to their finding that cereal grass was shown to contain factors which support the growth of lactobacilli and other beneficial intestinal bacteria, block the development of scurvy, stop the formation of histamine induced and peptic ulcers.

Other Unidentified Health Factors in Cereal Grasses

By 1950, all the nutrients now considered essential to the human diet (with the exception of selenium) had been identified. But researchers continued to describe green food “factors” which could not be correlated with any known nutrient.

In the late 1950’s early 1960’s Ann Wigmore “re-discovered” wheatgrass and was able to cure her own ‘untreatable’ colon cancer. She also had been a terrible accident which had crushed her legs, gangrene set in and the doctors wanted to amputate her legs. Ann had made friends with Dr. Earp Thomas, who believed that wheatgrass was one of the most powerful healing foods known to man. Dr. Thomas found that an ounce of wheatgrass in a gallon of fluoridated water would turn the fluorine into harmless calcium-phosphate-fluoride compound. Used in wash water it adds softness to the face and hands. It stops bleeding, eases itching, and helps in wound healing . Dr. Thomas further discovered that fruits and vegetables contaminated by sprays were thoroughly cleaned and the negative food transformed by wash water with a wisp of wheatgrass placed in the water.

As Ann spent untold hours with her mentor, Dr. Thomas and as she learned more and more about the medicinal effects of grass, she decided to heal herself of her disease and her injuries. She began drinking fresh wheatgrass and eating natural raw living foods. She shared wheatgrass with several sick friends and along with her, each recovered from their sickness.

Drinking wheatgrass should not be considered a one-stop cure all. Although wheatgrass has helped hundreds of thousands of people recover from serious illness, it is neither a drug nor a magic bullet. We therefore  suggest freezing as much locally grown organic raw vegetables, fruits and berries as possible, unless you have access t this level of fresh living  nutrition year around.

The freezing process will cause the enzymes to become inactive thereby preserving the nutritional values. The grocery stores are also selling food which has traveled across the country, or has been flown in from halfway around the world, so the food source is sometimes unknown and with the loss of water volume much of the vitamins and phyto-nutrients have been reduced.

Cooking food was the way early man preserved it. There was no refrigeration or dehydration. To keep there food from rotting they had to stop the enzymatic processes and that’s why when we cook our food the enzymes begin to decrease. This decrease starts between 104 and 106 degrees and by the time the temperature reaches 120 degrees all the enzymes are destroyed.

Cooking food also diminishes the oxygen levels, destroying the foods ability to bring life giving oxygen to our cells.  An easy way to remember the best temperature to cook you foods is “105 stay alive”.
