Thirty Days of Juice! Day 6

Salad Juice

Makes 2-3 glasses

Ingredients:

  • 1/2 cucumber
  • 1/2 bunch of iceberg, cos or romaine lettuce
  • 2 large ripe pears
  • 3 oz fresh spinach
  • 6-8 radishes
  • Crushed ice
  • Sliced radishes and cucumber for garnish

Directions:

  1. Using a small, sharp knife, chop the cucumber into chunks. Roughly tear the lettuce into pieces. Quarter the pears and remove the core.
  2. Push all the ingredients through a juicer. Pour over crushed ice in tall glasses and serve with sliced radishes and cucumber swizzle sticks.

Health Tip: Despite their reputation for being full of water, lettuce and cucumber contain important minerals such as calcium and zinc — in addition to other crucial nutrients such as vitamin K. Spinach contains plenty of betacarotene and has cancer-fighting properties. Juiced with ripe pears for maximum sweetness, a regular dose of this super juice can only enhance your health.
