Burt Juices Manhattan: By CHI Canadian Correspondant Burt Serfaty

New York, the city that never sleeps sure did a number on me. For the past two days I’ve been trekking around Manhattan visiting every organic juice bar on the island.

 

I call it research and development for my own upcoming organic juice bar in Toronto. Why re-invent the wheel? If it’s selling in New York it must be hot. So I asked around.

My first stop was Juice Press, all organic juices, smoothies and some raw food and snacks. At 70 east 1st St. I found this location had the right vibe. Of course the unusually warm and sunny weather sure helped get everyone dancing in the streets. So me being a typical guy, I went over to a group of stunning models to get their thoughts. I asked my first question and they all stood up to answer. This is a problem for me. I’m 5′ 6″. After asking them politely to have a seat they told me they love raw juices and smoothies because it keeps their energy up and their flat bellies full without having to eat a large meal. Then I found out there is a modelling agency in the neighborhood. I opted for the Frozone, a delicious smoothie made from coconut water, acai berry, banana, strawberry, raw cacao powder, bee pollen and a pinch of sea salt. All 17 ounces for $8.

My next stop was Organic Avenue on Sullivan St. in Soho. I was still full from the Frozone but I had to make some room for the Veggie Vibrance. Made from carrot, celery, cucumber, beet, spinach, swiss chard, lemon, ginger and parsley. I enjoyed this drink straight from the glass returnable bottle. I did find the taste of ginger overpowered the other ingredients, but then again I’m not the biggest fan of ginger.

On my second day I again started out at the Juice Press new location on Mott St. I had the Pico de Gallo, literally translated from spanish to mean chicken beak! Let me tell you it was awesome. Mesculen greens, a whole avocado filled with homemade salsa, vegan jalepeno cashew cheese, raw beets and sprouts but what made this salad work for me was the dressing.

The rest of the day I visited some family run juice bars that offered a mix of juices and food and some pretty odd choices. For example a sign read “Fresh organic vegetable juice 10% off with any choice of hamburger or chicken entree.”  You figure that one out. My day ended at another Organic Avenue location on 116 Suffolk in the lower east side. My choice this time was the “Creamy Orange Love Smoothie,” made with orange juice, coconut meat, lucuma powder, coconut sugar, vanilla, tumeric, Irish moss, Himalayan salt and stevia. A bit sweet for me but very tasty.

Tomorrow my last day in Manahattan its the Juicy Lucy Juice Bar and One Lucky Duck, with those names they’re a must visit. Oh, another reason why I love the Juice Press and Organic Avenue is all their food, juices and smoothies are certified Kosher. Sacred juice, you just can’t go wrong!

Day 3 – Greens & Apples – Juice January 3, 2012

 

Greens & Apples

 Makes 2 glasses

Ingredients:

  • 2 collard greens leaves
  • 2 kale leaves
  • handful of spinach
  • 2 stalks of celery
  • 2 – 3 Granny Smith Apples

Directions:

  1. Juice all ingredients in a juicer.
  2. Pour into a shaker with ice and mix well. Enjoy!

Health Tip: Eat your greens! This is such a yummy way to do it.  According to The World’s Healthiest Foods, The cholesterol-lowering ability of collard greens may be the greatest of all commonly eaten cruciferous vegetables. In a recent study, steamed collard greens outshined steamed kale, mustard greens, broccoli, Brussels sprouts, and cabbage in terms of its ability to bind bile acids in the digestive tract.  Kale, of course, is another super green. The World’s Healthiest Foods reports kale’s risk-lowering benefits for cancer have recently been extended to at least five different types of cancer. These types include cancer of the bladder, breast, colon, ovary, and prostate. Isothiocyanates (ITCs) made from glucosinolates in kale play a primary role in achieving these risk-lowering benefits.

Day 1 – Carrot Celery Clean Sweep Juice – January 1, 2012

This is day 1 of our 3-7-10 day juice fast -feast.  Everyone can benefit from drinking at least one glass of healthy juice a day.  It’s my hope each of you will want to drink more than one glass of juice to help you cleanse, rebuild and strengthen your bodies after the holiday season.  If you are growing wheatgrass, or sprouts you can always juice them with any of the CHI recipes, in-fact we encourage you to do so.  You have permission to repost or send these juice recipes anywhere you like, just make sure; you give CHI and the author credit.  We love all of you and pray 2012 will be a rawmazing year!

Carrot Celery Clean Sweep


Makes 1 large or two small glasses

Ingredients:

  • 1 celery stick
  • 11 oz of carrots
  • 5 oz green grapes
  • several large sprigs of parsley
  • celery and/or carrot stick to serve as garnish

Directions:

  1. Using a sharp knife, roughly chop the celery and carrots. Push Half of the celery, carrots and grapes through a juicer, then add the parsley sprigs. Add the remaining celery, carrots and grapes in the same way and juice until thoroughly combined.
  2. Pour into one or two glasses and serve with celery and/or carrot stick stirrers for garnish.

Health Tip: This juice is so packed with goodness, you can almost feel it cleansing and detoxing your body. As well as valuable vitamins, the carrots and grapes provide plenty of natural sweetness, which blends perfectly with the mild pepperiness of the celery and fresh scent of parsley. Serves Four

EQUIPMENT NEEDED:  1 gallon glass jar/lid, strainer, wooden spoon

INGREDIENTS:

1 cup quinoa

1 gallon filtered water

DIRECTIONS:

 

1.            Soak one cup of quinoa in a jar for 2 hours for every gallon of Rejuvelac you will be making.

2.            Place a screen tightly over the opening of the jar, securing with a rubber band.

3.            Drain the liquid from the jar.

4.            Rinse the quinoa thoroughly and drain the water out.

5.            Lay the jar on its side, raising the back of the jar 2 – 3 inches, so any excess water can drain out.  Make sure that air can get in through the screen.

6.            Cover the jar with a towel, and the quinoa will sprout overnight.  You can tell when it is ready to grind when the tails are as long as the seeds.  The ¼ cup you began with should now have reached about 1 cup.

7.            Grind one cup of the sprouted seeds in a blender with a little filtered water.

8.            Pour the ground mixture into a clean, sterilized 1 gallon glass jar and fill with filtered water.

9.            Place the lid back on the jar, but do not tighten.  Cover the jar with a towel, and let stand at room temperature (approximately 68° – 78°).  You will be stirring the Rejuvelac every day until it’s ready.

10.       Prior to stirring the first time, remove the ground grains floating at the top.

11.       Stir twice a day with a wooden spoon.

12.       The Rejuvelac is ready when it smells like fresh baking bread, the mixture is tart, and has a mild lemony taste.

13.       Filter the Rejuvelac by pouring it through a strainer and into another jar.

Fermentation is a function of time and temperature.  Rejuvelac may be ready in as little as one or two days during the summer.  It may be kept in the refrigerator for a several days.

The Wheatgrass Juice Martini!

Makes two glasses

Ingredients:

  • 6 Ounces Apple Juice
  • 2 Ounces Lemon Juice
  • ½ Ounce Ginger Juice
  • 2 Ounces Wheatgrass Juice
  • Sparkling Mineral Water

Directions:

  1. You will juice your fruit separately using about 4 apples, 1 lemon, 3 inches of  ginger and two cups of wheatgrass. If you do not have a juicer that’s appropriate for wheatgrass, you can blend it with a few ounces of purified water in a high-speed blender and strain the blended mixture through a seed and nut bag to remove the pulp.
  2. Mix juices together and add sparkling mineral water to taste.
  3. Pour into martini glasses and enjoy!

Health Tip: The best thing about wheatgrass juice  is that it contains 70% chlorophyll – the pure sunlight energy plant enzyme, which helps oxygenate the body and is also proven to decrease activity of cancer-causing agents – there is a strong link between wheatgrass and cancer prevention. In fact, it’s so nutritious that an ounce of it is equal to 2 ½ pounds of vegetables.

Wheatgrass Orange Juice

Makes one tall glass

Ingredients:

  • Two cups freshly cut wheatgrass
  • Four oranges
  • Ice cubes

Directions:

  1. Juice oranges through a citrus juicer
  2. Juice wheatgrass through a wheatgrass juicer. Or, if you do not have a wheatgrass juicer, put wheatgrass with 1/2 cup of purified water in a high-speed blender. Liquify. Pour into a nut and seed milk bag and strain.
  3. Pour orange juice into tall glass.
  4. Top with wheatgrass juice.
  5. Plunk a few ice cubes in the glass for a pretty look.
  6. Enjoy your liquid sunshine!

Health Tip: Drink wheatgrass daily for energy, nutrition, cleansing and body building! Wheatgrass juice contains most of the vitamins and minerals needed for human maintenance. It is a whole meal and complete protein  and it is very high in enzymes and chlorophyll. It contains up to 70% chlorophyll, which is an important body builder. The chlorophyll molecule closely resembles that of the hemin molecule, the pigment that combines with protein to form hemoglobin. The major difference is the chlorophyll molecule contains magnesium as its central atom, and hemin contains iron. The molecular structure of these two substances is almost identical in all other respects. It builds the blood. Wheatgrass juice has been proven to build red blood cells quickly after ingestion. It normalizes high blood pressure and stimulates healthy tissue cell growth.

Berry Medley

Makes two to four tall glasses

Ingredients:

  • 2 cups of strawberries
  • 2 cups of blueberries
  • 1 1/2 cups of raspberries
  • Cold purified water and ice to taste

Directions:

  1. Rinse fruit
  2. Push fruit through the juicer
  3. Stir in water to taste
  4. Pour over ice and garnish with a strawberry wedge

Health Tip: All berries are a great source of antioxidants such as anthocyanins, flavonoids and ellagic acid, all of which have been associated with anti-cancer and anti-heart disease benefits.

Potassium Juice

Makes 2 medium glasses

Ingredients:

  • 3 carrots
  • 3 stalks celery
  • ½ bunch spinach
  • ½ bunch parsley

Directions:

  1. Rinse vegetables well
  2. Run all ingredients through a juicer
  3. Pour into glasses and enjoy!

Health Tip: Drink your potassium! It helps your muscles and nerves function properly, helps lower your risk of high blood pressure and helps to maintain the proper electrolyte and acid-base balance in your body. Excellent sources of potassium include chard, crimini mushrooms, and spinach.

 


 

Thirty Days of Juice! Day 26

Joy Juice

Makes 2 glasses

Ingredients:

  • 3 hard pears
  • 1 cantaloupe
  • 1 sweet potato

Directions:

  1. Scoop seeds out of melon and slice into sections.
  2. Remove stem from rinsed pear and slice it.
  3. Rinse and slice sweet potato.
  4. Feed all ingredients into the juicer.
  5. Garnish with a wedge of melon and enjoy!

Health Tip: Drink cantaloupe juice for a great source of Vitamin A — especially if you or someone you love is a smoker or if you are frequently exposed to secondhand smoke. Making vitamin A-rich foods, such as cantaloupe, part of your healthy way of eating may save your life, suggests research conducted at Kansas State University.

While studying the relationship between vitamin A, lung inflammation, and emphysema, Richard Baybutt, associate professor of nutrition at Kansas State, made a surprising discovery: a common carcinogen in cigarette smoke, benzo(a)pyrene, induces vitamin A deficiency.

Baybutt’s earlier research had shown that animals fed a vitamin A-deficient diet developed emphysema. His latest animal studies indicate that not only does the benzo(a)pyrene in cigarette smoke cause vitamin A deficiency, but that a diet rich in vitamin A can help counter this effect, thus greatly reducing emphysema.

Ginger/Lemon Cleanse

Makes 2 glasses

Ingredients:

  • 1-inch slice Fresh Ginger Root
  • 1 Fresh Lemon
  • 6 Carrots with tops
  • Apple
  • Water

Directions:

  1. Stem apples
  2. Run all ingredients except water through the juicer
  3. Add cold water to taste
  4. Pour into glasses and enjoy!

Health Tip: Carrots are legendary for promoting healthy vision and also known for promoting healthy lungs, colons and hearts. When selecting carrots,  roots should be firm, smooth, relatively straight and bright in color. The deeper the orange-color, the more beta-carotene is present in the carrot. Avoid carrots that are excessively cracked or forked as well as those that are limp or rubbery.

 

Thirty Days of Juice! Day 24

Ginger Ale Juice

Makes 1 tall glass

Ingredients:

  • handful of grapes
  • 1 apple, cored and sliced
  • ½ inch fresh ginger (less if you find the taste too strong)
  • 1/2 lime
  • 1/4 lemon
  • purified water to taste

Directions:

  1. Feed all ingredients except water through a juicer
  2. Dilute with water to preferred consistency.
  3. Pour into tall glass over ice.
  4. Garnish with wedge of lemon and enjoy every sip of energy-boosting goodness!

Health Tip: Grapes provide the majority of the Cardioprotective benefits of Red wine without the risks of alcohol consumption, which, if excessive can lead to accidents, liver problems, higher blood pressure, heart arrhythmias-and alcoholism

Cran-Apple Juice

Makes 1 large or 2 small glasses

  • 2 apples
  • 1 1/4 cups of cranberries
  • 1 tsp Stevia
  • 1/2 tsp cinnamon
  • 1/4 cup water (optional)

Directions:

  1. Wash and  slice the  apples and wash the cranberries
  2. Feed fruit  through juicer
  3. Stir in Stevia and cinnamon
  4. Add 1/4 cup cold water if desired
  5. Garnish with an apple wedge; serve over ice and enjoy!
Health Tip: This  is a great tonic for your bladder and kidneys.  It is able to assist as a toxic build-up remover, removal of purines, uric acid, urea in the prostate gland, testicles, kidneys and bladder. This juice is a great defense against yeast infections for women.

Cucumber Melon Lift


Makes one large or two small glasses

Ingredients:

  • 2 cucumbers
  • 1/2 honeydew
  • 1 cup alfalfa sprouts

Directions:

  • Wash cucumbers and peel melon. Chop  into chunks.
  • Feed all ingredients through the blender.
  • Serve over ice and garnish with a slice of cucumber.

Health Tip: The silica in cucumber is an essential component of healthy connective tissue, which includes muscles, tendons, ligaments, cartilage, and bone. Cucumber juice is often recommended as a source of silica to improve the complexion and health of the skin, plus cucumber’s high water content makes it naturally hydrating—a must for glowing skin. Cucumbers are also used topically for various types of skin problems, including swelling under the eyes and sunburn. Two compounds in cucumbers, ascorbic acid and caffeic acid, prevent water retention, which may explain why cucumbers applied topically are often helpful for swollen eyes, burns and dermatitis.

Bloody Mary of the Sea

Makes 2 Large Glasses

Ingredients:

  • 6 Medium tomatoes
  • 4 Stalks of celery
  • 1 oz Spinach
  • 3 oz Bean sprouts
  • 1 Tbsp. Kelp powder
  • 1 Jalapeño pepper
  • 2 Carrots

Directions:

  1. Chop all ingredients except bean sprouts and Kelp powder.
  2. Push all ingredients except Kelp powder through a juicer and catch with a bowl.
  3. Whisk in Kelp powder.

Detroit Firefighter Shares Juicy Story

 

At first Detroit Firefighter Mark Myers didn’t really think he could benefit  much from participating in a Three-Day-Juice Fast at Creative Health Institute.

He questioned how much he could learn because he’s a bit of a self-taught juicing aficionado.  In fact he’d lost 45 pounds in the juice fast he under went for the sixty days preceding his enrollment in Creative Health Institute’s Advanced Raw Chef Level 1 Certification Program that began Friday,  April 29.

He only decided to stay for the three-day juice fast that began Sunday night because he was offered a discount for participating in both programs. He figured he might as well stick around for the juice fast since he was making the trip to CHI anyway.

After losing five pounds on the first day of the fast, the Detroit Firefighter is a believer in Creative Health Institute’s methods. He thinks the fresh wheatgrass and sprouts made all the difference and helped kick his juice program into high gear.

“I was really blown away — especially because I made the really dark green juices,” Mark said. ” That first green juice  (at CHI), within 15 minutes of drinking it, I started feeling more calm and relaxed. I guess it is because it had the sprouts in it.”

Mark said he learned lots during the CHI juice fast and he would like to come back in the future for a 10-Day Detox.  But he’s not going to talk too much about it at the fire house. He said already some of the guys have given him some weird looks as they’ve seen him carrying large boxes of fresh vegetables to work.

“I probably shouldn’t have talked about it as much as I did. From now on I am going to say, ‘It seems to work for me. I don’t know, maybe it’s not for everybody.”

Mark smiled and continued his fantasy about addressing a resistant fire-fighting colleague: “Maybe you’re the one person who does better on potato chips; I don’t know.” He chuckled. “No,  I am not going to say that.”

As far as juicing as a way of losing weight goes, Mark said he wouldn’t go for any other method. He had been successful with juicing for better health and weight loss in the past. Then he fell away from his healthy eating habits and slowly gained the weight back.

What he likes about juicing, he said, is that it’s so healthy — and fast.

“I didn’t really start doing it to lose weight. I was doing it to feel better,” he said.  “I wanted to lose weight but I was doing it more as a way to cure any type of disease.”

And to his amazement, each time he undertook a lengthy juice fast, a fungus that grows on his toenail disappeared.

“There is no other diet that does that,” Mark said. “My toenail is growing normal again.”

 

Mark’s Juice Fasting Tips

(Note: Mark goes vegan and high raw during  juice fasting. He is increasing his raw-food intake.)

  • Start with a simple fruit juice in the morning — such as cantaloupe, watermelon, grapefruit or pineapple.
  • Juice lots of carrots, beets and raw green superfoods.
  • Drink Kambucha or Rejuvelac (Mark had been buying Kambucha every-other day for $4 a bottle but at CHI he learned to make Rejuvelac and he says he’ll be using more of that in the future).
  • Use Sprouts and Wheatgrass (This is something he picked up at CHI).
  • If you are undertaking a long-term juice fast, a hot tomato and vegetable soup made in the crock pot each evening can help you get through the snacking hurdle. Note: This is not advocated by CHI but it is a method that Mark found helpful to him.
  • Walk every day.

Mark’s Fire House Energizer

Makes 2 medium-sized glasses

Ingredients:

  • Carrots, 5
  • Apples, 1 small
  • Spinach, handful
  • Parsley, handful
  • Broccoli Sprouts, handful

Directions: Feed all ingredients through a juicer. Mark uses a Jack LaLanne juicer that he bought at the store for $100 but he has his eye on a Champion Juicer for future use.
